Honey has deep roots in Russian history. It has been used as food since ancient times and was an important product in the everyday life and traditions of the Slavic peoples. Honey souffle Peroni
Peroni honey souffle is a special product. It is made using a special technology of gentle mixing. Natural honey is mixed for a long time in special blending containers together with dried berries, fruits, nuts, after which it is poured into jars and sent to special cooling thermal chambers, where it acquires that very unique souffle-like consistency. It is not heated above 38 degrees Celsius, therefore all the beneficial properties of honey are preserved.
Berries and fruits are dried using Freeze drying technology or Lyophilization — a method of gentle drying. The ingredients are frozen, then placed in a vacuum and moisture is removed. The product is not exposed to high temperatures, its taste, aroma and color are maximally preserved.
In recent decades, there has been a resurgence of interest in natural and organic products, making honey popular among modern consumers. Russia is actively developing eco-projects related to beekeeping, which emphasize the importance of preserving bees as key pollinators. This creates new cultural and economic opportunities, linking tradition with modernity.
